IMPLEMENTATION AND DEVELOPMENT OF THE WINE SECTOR IN MEXICO
Abstract
In Mexico, wine is very rich, the way of harvesting the fruits is an art that, even though it is practiced all over the world, much of the Mexican wine has not been exported internationally, so in the project we could give an idea about the elaboration of wines in Mexico. The production of Mexican wines and cultivation of vineyards in large extensions of land is carried out in the states of Baja California, Coahuila, Querétaro, Aguascalientes and Zacatecas, the largest production occurs mainly in the Valle de Guadalupe because it is located in the northern fringe of wine and its climatic characteristics. My personal interest in analysing the processes that led to the development of the Mexican wine industry arises from the initial observation that viticulture in Mexico has become a sector that in a decade has reconfigured itself to position itself as an important promoter of development in the region, whose endogenous impulse is evident. I truly believe that Mexican vineyards specialize in creating wine with natural ingredients. With the Hispanic conquerors and missionaries came the vines and the olive tree, so there was a great change in viticulture, although currently some were changed or discarded. The vineyards are an innovation in the Mexican culture since many people have not been able to visit a vineyard, and many do not know the smells and flavours that are produced in a vineyard.
